Cooked on what the fire leaves

Cenusa is Romanian for ash. It is what the fire leaves, and we cook on all of it. Four stages of one fire, from the quietest heat to the hottest.

  1. Embers

Buried in the ash, left alone. We salt with it, bake bread in it and bury beetroot in it. Ash is the first thing we keep.

Lumps of charcoal with red glowing cracks
  2. Coals

The slow heat that is left after the blaze. Bread, roots, custards and anything that needs hours, not minutes.

    Sparks rising from glowing charcoal
  3. Flame

Wood burning under the food. The dark edge on a leek, a fish skin, a lemon half. We cook until it arrives, then stop.

Food on a grill in flame and grey smoke
  4. Open flame

Straight into the fire. Wood only, never gas. The smoke is a seasoning, so the wood is chosen like one.

Split logs burning with bright flames

How we cook

  • One fire, no shortcuts

There is no gas line in the kitchen. If the fire is not ready, dinner is not ready.

  • Cook with what is in season

The menu is rewritten each season and trimmed each week, so it is short on purpose.

  • Use everything the fire leaves

Ash seasons, embers bake, bones make stock. Nothing goes cold and unused.
